Our cured meats are prepared by skills hands, combining craftsmanship and ancient methods to reproduce time-honoured flavours and goodness.   

Only the finest quality raw materials and ingredients are used in production.

 

 

Choice meats are sourced from specifically selected and scrupulously monitored breeding farms, ensuring that the end product is high in nutritional value and entirely natural.

 

 

Casings and salting mixtures are recreated from local recipes that have been preserved and handed-down over many generations. Our loyalty to tradition extends to the strict exclusion of lactose, resulting in products of absolute authenticity, whilst conforming to stringent food safety standards.

 

 

For the curing phase we use cellars designed and structured to reproduce the healthy moulds essential for the effective ageing of a wholesomely nutritious and prestigious gourmet product.

  

 

Every stage of processing the cured meats takes place in our own workshops, where the art of traditional butchery forms the foundation for continued development of optimum quality meat products.

 

 

Once our cured meats have met our own strict levels of quality control and comply with our exacting criteria, we can confidently distribute them to the valued consumer to enjoy.

sopressata

A salami created by selecting only noble cuts of pork meat,  unnerved and cut by knife tip. Stuffed into natural casings and seasoned with natural herbs  and spices; it is meticulously tied by hand.

A speciality made with this sublime cured meat and produced exclusively by us, is ‘Soppressata with Walnuts’.

salsiccia

Salami made from a finely wire-drawn pork mixture.

Stuffed into natural casings, seasoned with natural herbs and spices with the special addition of wild fennel.

angioletti & diavoletti

Angioletti e Diavoletti, or ‘little angels and devils’, are small salami sausages created from pork mixture drawn in cross-sections.

Stuffed into thin natural casings and tied in small ‘chunks‘ by hand .

For the diavoletti, as well as natural herbs and spices, hot pepper is added.

Ingredients:  Pork meat, salt, black pepper in grain, red hot chili pepper (for diavoletti) and natural herbs & spices in natural casing

pancetta  arrotolata

A cured meat prepared from a belly-cut of the pig, which is boned and skimmed and undergoes a salting process with natural herbs and spices. The meat is then rolled and tied by skilled hands.

pancetta  tesa

Prepared from a cut of pork belly with its rind, that is salted and then washed and dried. The curing phase lasts at least 45 days. Many varieties of this meat are created using different natural herbs and spices. Among the varieties we offer are: pancetta with sweet chilli or spicy chilli and pancetta with black pepper or white pepper, all of which are wrapped in laurel leaves picked from our garden.

capocollo

A cured meat prepared from a cut of boneless pork neck, which undergoes the traditional method of salting before being washed with wine; after being well dried, it is stuffed into natural casings and hand-tied. After a lengthy aging process, ranging from 90 to 180 days, the very best meats are selected to undergo a further aging period, after which they have earned the right to become part of our meat reserves.

rustico

A cured meat prepared from the renowned pork loin with its rind, known to preserve all of its goodness. Trimmed and salted, then tied by hand.  It undergoes a long aging process ranging from 90 to 120 days. After careful selection, the best pieces remain for further refinement through aging, to brilliantly represent our meat reserves.

fiocco

Corresponding to a cut of the muscular part of the pig’s thigh, which resembles the shape of a pear, the meat is left with rind and is massaged several times before being washed and dried thoroughly. It is then ready to be aged for at least 12 months , a lengthy period which allows the meat to release its refined and prestigious flavours and aromas. The lengthy preparation and thorough ageing give life to the sublime quality and effusive delicacy of this meat, suited to the palate of the most discerning and demanding gourmet.

fiocchetto

Fiocchetto, is created from the remaining muscular part of the cut of the pig’s thigh used to make Fiocco, it is aged for a period of less than 12 months and can be consumed and enjoyed after just the fourth month of aging.
